  • 3 Eggplant also known as brinjal; small eggplants are preferred
  • 3 Potato

  • 1.5 tbsp Oil vegetable or canola oil
  • 1/2 - 1 cup Water adjust to desired gravy consistency

Prepare the Spice Paste

  • Grind together coriander leaves, green chilies, garlic, coriander powder, turmeric powder, and salt into a smooth paste using as little water as possible.

Sauté the Paste and Vegetables

  • Heat oil in a pressure cooker or kadai over medium-low heat. Add the spice paste and sauté until it changes color, stirring frequently to prevent burning.

Add Vegetables and Cook

  • Cut potatoes and eggplants into 1-inch pieces. Add the potatoes and eggplants to the spice paste. Add water, adjusting the amount for your desired gravy consistency (thicker for roti, thinner for rice). Cook in a pressure cooker for 2-3 whistles on medium heat, or in a kadai, covered, until the vegetables are tender.
