I use a wholesome blend of 50% all-purpose flour and whole wheat flour, stuffing some muffins with mozzarella, onions, and sauce, and topping others with juicy cherry tomatoes.

Ingredients
- 3/4 cup All-Purpose Flour maida
- 3/4 cup Whole Wheat Flour whole
- 2 tsp Baking Powder
- 1/4 cup Oil olive oil or any oil
- 1 cup Milk i used full fat milk
- 1 cup Yogurt curd, i used homemade curd
- 1 tsp All-Purpose Flour or seasoning seasoning
- 1 tsp Seasoning or oregano oregano
- 1.5 tsp Garlic Powder crushed or
- 2 tsp Salt or as per taste
- 1/2 cup Pizza Sauce
- 1 cup Mozzarella Cheese or any cheese shredded
- 1 Onion medium size chopped
- 13.5 Cherry Tomatoes
Instructions
- Preheat the oven.
- Grease muffin cups with oil or ghee.
- Sieve together whole wheat flour + all purpose flour, baking powder, and salt.
- Add seasonings and garlic powder to the flour mixture.
- Mix all wet ingredients in a bowl and beat them together (oil+ milk + curd)
- Mix flour mixture to wet ingredients till well mixed. Adjust consistency like a thick idli batter. So that when we add onions and sauce and tomatoes, they will not sink to the bottom.
- Assembling for baking the cupcakes. Keep everything ready on the kitchen counter. Vegetables chopped and cheese grated sauce etc....
- Spoon 1/4 full batter to each cups then add a little sauce in the centre.
- Put some onion pieces over the sauce and then some cheese. I made some with and without onions.
- Now spoon some more cake batter. This should be 3/4 full.
- Add some cheese on top and garnish with sliced cherry tomatoes.
- Bake for 20-30 minutes on 180C.
- Bake till puffed up and till little golden in colour.
Recipe Notes
Can be made in only wheat flour or only all purpose flour. Can sneak in any vegetables you want. And as I’ve mentioned earlier, you can be an artist and design your own flavour.
Additional Tips
- For a burst of tang and authentic pizza flavor, try swirling a spoonful of pizza sauce into the center of each muffin before baking, or layer a little sauce both inside and on top of the muffins along with your favorite toppings.
- If you prefer a crispier muffin top reminiscent of pizza crust, sprinkle a mixture of breadcrumbs and grated Parmesan over each muffin before baking.
- To make these muffins vegan, substitute dairy milk with unsweetened plant-based milk, use vegan yogurt, and replace cheese with your favorite vegan mozzarella or a sprinkle of nutritional yeast for a cheesy flavor.
- These muffins freeze well—let them cool completely, then wrap individually and freeze. Reheat in the oven or toaster oven for a quick snack that retains its texture and flavor.
