- 2 tbsp Cheese shredded or crumbled

- 2 tbsp Millet Flour

- 1 tbsp Olive Oil
- 2 tbsp Guava Juice
- 1 tbsp Herbs cilantro, fresh, minced (such as parsley, or chives)
- 1 tsp Pepper black, freshly ground
- 1-2 tsp Salt or to taste
Instructions
- Sauté the mixed greens in olive oil with a pinch of salt until they wilt slightly. This helps to enhance their flavor and reduce their volume.
- In a bowl, combine the sautéed greens, millet flour, sweet corn, black pepper, and minced fresh herbs.
- Lightly grease a muffin tin with olive oil or cooking spray. This prevents the muffins from sticking.
- Fill each muffin cup with the veggie mixture.
- In a separate bowl, whisk together the eggs and guava juice until light and frothy. This creates a smooth and evenly cooked muffin texture.
- Pour the egg mixture over the veggies in the muffin cups.
- Sprinkle the cheese evenly over the top of each muffin.
