Ingredients

- 4 Large Eggs
- 2-3 Tbsp Cheese grated
Spices & Seasoning
- 1/2 tsp Pepper black
- 1/2 tsp Oregano dried
- 1/4 tsp Chili Powder optional, red
- 1-2 tsp Salt or to taste

- 1/2 Tbsp Oil for greasing the muffin tin
Instructions
- Preheat your oven to 350°F (175°C). This ensures the egg muffins cook evenly.
- Grease a muffin tin with oil. This will prevent the egg muffins from sticking.
- In a mixing bowl, whisk together the eggs, black pepper, salt, oregano, and red chili powder (if using) until light and frothy.
- In a separate bowl, combine the broccoli florets, mushrooms, and chopped onion.
- Fill each muffin cup about halfway with the vegetable mixture.
- Pour the egg mixture over the vegetables, filling each muffin cup almost to the top.
- Sprinkle grated cheese over the top of each muffin.
- Bake for 25 minutes, or until the egg muffins are set and the cheese is golden brown. A toothpick inserted into the center should come out clean.
- Let the egg muffins cool slightly in the muffin tin before carefully removing them. Serve warm and enjoy!
