Ingredients

- 1 cup Whole Wheat Flour whole
- 1/2 cup Rolled Oats
- 2 tsp Baking Powder
- 1/2 tsp Salt or to taste
- 1/2 tsp Oregano dried
- 2 tsp Pepper Flakes red
Wet Ingredients
- 3/4 cup Silken Tofu finely grated or pureed
- 6 Olives black, finely chopped, pitted
- 3/4 cup Milk any kind
- 2 tbsp Olive Oil
- 1 Large Egg
Instructions
Prepare the Dry Ingredients
- Combine whole wheat flour, rolled oats, baking powder, salt, oregano, red pepper flakes, and finely grated or pureed silken tofu in a large bowl. Gently fold in the finely chopped black olives.
Prepare the Wet Ingredients
- In a separate bowl, whisk together the egg, milk, and olive oil until well combined.
Combine Wet and Dry Ingredients
- Pour the wet ingredients into the bowl with the dry ingredients. Gently fold everything together until just combined. Do not overmix.
Bake the Muffins
- Line a standard 12-cup muffin tin with paper liners. Fill each liner about 3/4 full with the batter.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden brown.
