Instructions

Prepare the Dry Ingredients

  • Combine whole wheat flour, rolled oats, baking powder, salt, oregano, red pepper flakes, and finely grated or pureed silken tofu in a large bowl. Gently fold in the finely chopped black olives.

Prepare the Wet Ingredients

  • In a separate bowl, whisk together the egg, milk, and olive oil until well combined.

Combine Wet and Dry Ingredients

  • Pour the wet ingredients into the bowl with the dry ingredients. Gently fold everything together until just combined. Do not overmix.

Bake the Muffins

  • Line a standard 12-cup muffin tin with paper liners. Fill each liner about 3/4 full with the batter.
  • Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean. The tops should be lightly golden brown.

Cool and Serve

  • Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.

Recipe Notes

Expert Tips for Perfect Savory Tofu & Olive Muffins

  • For extra flavor, add 1/4 cup of grated Parmesan cheese to the dry ingredients.
  • If you prefer a spicier muffin, increase the amount of red pepper flakes or add a pinch of cayenne pepper.
  • Don't overmix the batter! Overmixing can lead to tough muffins.
  • For a richer flavor, use extra virgin olive oil.
