  • In a large bowl, combine the flour, yeast, milk powder, salt, sugar, and oil.
  • Gradually add the warm water while mixing with your hands or a stand mixer until a medium-soft dough forms. Kneading develops gluten, which gives the bread its structure.
  • Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 1 hour, or until doubled in size.
  • While the dough is rising, prepare the chicken filling. In a skillet, sauté the chopped onions and green chilies in butter until softened.
  • Add the shredded chicken, garam masala, black pepper, and chopped cilantro. Cook for a few minutes until heated through and fragrant.
  • Stir in 2 tablespoons of flour to help thicken the filling. Set aside to cool.
  • Punch down the risen dough to release the air. Divide the dough into 2 or 3 equal portions.
  • On a lightly floured surface, roll out each portion into a rectangle. Spread softened butter over the rectangle.
  • Place a portion of the chicken filling in the center of the rectangle. Make slits along both of the longer sides of the rectangle, leaving the center intact.
  • Starting from the top, fold the strips of dough over the filling in a criss-cross pattern, alternating from left to right and right to left. This creates a beautiful braided effect.
  • Place the shaped bread on a greased baking tray.
  • Preheat the oven to 400°F (200°C). Brush the bread with egg wash and sprinkle with sesame seeds.
  • Bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  • As soon as the bread comes out of the oven, brush it with melted butter. This adds flavor and keeps the crust soft. Cover the bread with a clean kitchen towel and let it rest for a few minutes to allow the steam to soften the crust.
