Ingredients
Oat Base
Tadka (Tempering)
- 1 tbsp Olive Oil
- 1/2 tsp Mustard Seeds
- 10 leaves Curry Leaves
- 1/2 tsp Cumin Seeds
- 1/2 tsp Baking Soda
- 2 tbsp Water
Savory Vegetable Filling
- 1/2 cup Onion chopped
- 1 tbsp Garlic minced
- 5 Beans chopped, green
- 1/2 cup Carrot grated
- 1 tbsp Chilies chopped, green
- 1/2 Zucchini sliced
- 1 medium Bell Peppers capsicum, chopped
- 2 tbsp Jalapeño Peppers chopped
- 1/4 cup Coriander chopped
- 3 leaves Spinach chopped
- 1 tbsp Tomato Sauce
- 1 tsp Pani Puri Masala
- 1 tsp Paprika
Toppings
- 1/2 cup Cheese grated
- 2 Olives sliced
- 1 medium Tomato chopped
- 1/2 tsp Himalayan Salt pink
- 1/2 tsp Pepper black
Instructions
- In a large bowl, combine the crushed oats, mashed potato, plain yogurt, butter, and salt. Mix well and set aside for 10 minutes to allow the oats to absorb the moisture.
- While the oat mixture rests, prepare the vegetables. Chop the onion, mince the garlic, chop the green beans, grate the carrot, chop the green chilies, slice the zucchini, chop the bell pepper, chop the jalapeño peppers, and chop the cilantro and spinach.
- Heat the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
- Add the chopped green beans and grated carrots to the skillet. Season with salt and sauté for 5-7 minutes, until slightly tender.
- Stir in the sliced zucchini, chopped bell pepper, chopped jalapeño peppers, chopped cilantro, chopped spinach, and tomato sauce. Cook for another minute, until the vegetables are heated through and the flavors combine.
- Add the pani puri masala and paprika to the vegetable mixture and mix well.
- To prepare the tadka (tempering), heat the olive oil in a small saucepan over medium heat. Add the mustard seeds and allow them to splutter. Add the curry leaves and cumin seeds, and let them crackle for a few seconds. This releases their aromatic oils, enhancing the flavor of the focaccia.
- Carefully add the baking soda and water to the tadka. It will fizz up. Quickly pour the tadka mixture into the oat batter.
- Add the sautéed vegetable mixture to the oat batter and mix everything thoroughly.
- Transfer the batter to a greased baking pan and spread it evenly.
- Decorate the top with grated carrot, sliced olives, chopped tomato, sliced zucchini, chopped spinach, chopped cilantro, and grated cheese. Sprinkle with pink Himalayan salt and black pepper.
- Bake in a preheated oven at 180°C (350°F) for 25 minutes, or until golden brown and cooked through. Let it rest for 5 minutes before slicing and serving warm.
