  • Combine the flour and salt in a large bowl.
  • Cut in the cold, cubed butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs. This creates pockets of butter that will result in a flaky crust.
  • Add the egg and mix until the dough comes together. Do not overmix.
  • Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough allows the gluten to relax, preventing shrinkage during baking.
  • Preheat oven to 180°C (350°F).
  • Heat the olive oil in a large skillet over medium heat.
  • Sauté the chopped onion until softened and translucent, about 5 minutes.
  • Add the minced garlic and thyme sprigs and cook for another minute until fragrant.
  • Add the diced chicken and cook until lightly browned.
  • Add the chopped mushrooms and cook until softened, about 5-7 minutes.
  • Season with salt and pepper.
  • Pour in the heavy cream and bring to a simmer. Reduce heat and cook for about 10 minutes, or until the sauce has thickened slightly.
  • Stir in the butter until melted and remove from heat. Set aside to cool slightly.
  • On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.
  • Cut out circles of dough and press them into mini tart molds. Prick the bottom of each tart shell with a fork. This prevents the dough from puffing up during baking.
  • Fill the tart shells with the chicken and mushroom mixture.
  • Sprinkle grated Parmesan cheese over the filling.
  • Bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  • Garnish with sliced spring onions and serve warm.
