Ingredients
For the Sugar Syrup
- 2 cup Sugar
- 1 cup Water
- 3 Cardamom Pods
- 1 tsp Lime Juice
For the Pancakes
- 1 cup Milk Cream
- 1/2 cup Sweetened Milk condensed
- tbsp Milk as needed
- 2 tbsp Ghee
Instructions
- In a heavy-bottomed pan, combine the sugar, water, and cardamom pods. Bring the mixture to a boil over medium heat.
- Continue boiling until the syrup reaches a one-string consistency. This means that when a drop of syrup is lifted between your thumb and forefinger, it forms a single, thin thread. Adding lime juice prevents the syrup from crystallizing.
- Stir in the lime juice. Remove the syrup from the heat and set it aside.
- In a mixing bowl, whisk together the milk cream (Sara) and sweetened condensed milk until smooth.
- If the batter is too thick, add milk, one tablespoon at a time, until it reaches a pourable consistency. The batter should not be too thin.
- Lightly brush a heavy-bottomed pan or griddle with oil or ghee. Heat over medium-low heat.
- Pour a tablespoon of batter onto the hot pan for each pancake, allowing it to spread naturally. Cook for about 2 minutes per side or until golden brown and cooked through.
- Flip the pancake carefully and cook the other side until golden brown. Serve the Sarapuli warm, generously drizzled with the prepared sugar syrup.
