  • Continue boiling until the syrup reaches a one-string consistency. This means that when a drop of syrup is lifted between your thumb and forefinger, it forms a single, thin thread. Adding lime juice prevents the syrup from crystallizing.
  • Stir in the lime juice. Remove the syrup from the heat and set it aside.
  • In a mixing bowl, whisk together the milk cream (Sara) and sweetened condensed milk until smooth.

  • If the batter is too thick, add milk, one tablespoon at a time, until it reaches a pourable consistency. The batter should not be too thin.
  • Lightly brush a heavy-bottomed pan or griddle with oil or ghee. Heat over medium-low heat.

  • Pour a tablespoon of batter onto the hot pan for each pancake, allowing it to spread naturally. Cook for about 2 minutes per side or until golden brown and cooked through.
