Ingredients
For the Saffron Sauce
- 1 cup Milk full-fat
- 1/4 cup Sweetened Milk condensed
- 4.5 strands Saffron
For the Vermicelli Filling
- 1/4 cup Vermicelli roasted
- 1 tsp Ghee ghee
- Sugar to taste
- 1/2 tsp Salt or to taste
- 1/2 cup Water
For the Pasta
- 4.5 Jumbo Pasta Shells
- Salt to taste
Instructions
- Infuse the saffron: Warm 2 teaspoons of milk and add the saffron strands. Set aside for 10 minutes to allow the color and flavor to bloom. This step intensifies the saffron's vibrant hue and aroma.
- Prepare the saffron sauce: In a pot, bring 1 cup of full-fat milk to a simmer over medium heat. Stir frequently to prevent scorching. Cook until the milk slightly thickens. This gentle simmering concentrates the milk's flavor and creates a creamy base for the sauce.
- Add the sweetened condensed milk and the saffron-infused milk to the pot. Whisk until well combined. Remove from heat and set aside. The sweetened condensed milk adds sweetness and richness to the sauce.
- Make the vermicelli filling: In a pan, melt the clarified butter over medium heat. Add the roasted vermicelli and stir constantly until fragrant. This toasts the vermicelli, enhancing its nutty flavor.
- Add the sugar and water to the pan. Cook, stirring occasionally, until the water evaporates and the vermicelli becomes soft. The water helps soften the vermicelli and dissolve the sugar, creating a moist and flavorful filling.
- Remove from heat and set aside.
- Cook the pasta shells: Bring a large pot of salted water to a rolling boil. Add the jumbo pasta shells and cook according to package directions until al dente. Salting the pasta water seasons the shells from the inside out.
- Drain the pasta shells and rinse under cold water to stop the cooking process. This prevents the shells from becoming mushy.
- Assemble the dessert: Gently fill each cooked pasta shell with the sweet vermicelli filling. Arrange the filled shells on a serving platter and generously pour the saffron sauce over them.
- Serve immediately and enjoy the warm, comforting flavors.
Recipe Notes
Good To Know
- You can use any flavor for the sauce, such as cardamom or rose.
- For an added layer of texture and flavor, sprinkle finely chopped pistachios or toasted almonds over the stuffed shells just before serving.
- If you prefer a lighter dessert, replace half the sweetened condensed milk with evaporated milk; this keeps the sauce creamy while reducing sweetness and richness slightly.
- To infuse even more saffron aroma, bloom the saffron strands in a tablespoon of warm milk for 10 minutes before adding them to the sauce.
- For a showstopping presentation, serve the pasta shells on individual plates drizzled with extra saffron sauce and a few edible rose petals for a festive, elegant touch.
Expert Tips
- If using cardamom, lightly toast the pods before grinding them to enhance their flavor.
- Ensure the pasta shells are cooked al dente; they should be tender but still hold their shape.
- For a richer saffron flavor, use high-quality saffron threads.
Storage Instructions
- Store leftover stuffed shells in an airtight container in the refrigerator for up to 3 days. Gently reheat them in the microwave or oven before serving.
