Ingredients
For the Honey Syrup
- ½ cup Water
- 5 Tbsp Honey
- ⅛ tsp Saffron Strands
For the Bread
- 4 slices Bread
- 2 Tbsp Clarified Butter ghee
For the Garnish
- ¼ cup Almonds slivered
- ¼ cup Pistachios slivered
- 1 Tbsp Charoli Nuts
- Honey for drizzling, to taste
Instructions
- In a small saucepan, combine the water and honey. Bring to a simmer over medium heat. Once simmering, add the saffron strands. Continue to simmer until the syrup slightly thickens. Remove from heat and set aside.
- In a separate heavy-bottomed saucepan or skillet, pour the milk. Bring to a boil over medium heat, then reduce heat to low and simmer, stirring occasionally, until the milk reduces to about ¼ of its original volume. This slow simmering process allows the milk to thicken and develop a rich flavor.
- Add the ground cardamom, sugar, and saffron-infused honey syrup to the reduced milk. Stir well to combine. Continue to simmer and stir for another 5 minutes, allowing the flavors to meld. Remove from heat and set aside.
- Cut the bread slices into triangles or desired shapes. Heat the clarified butter or oil in a large skillet over medium heat. Fry the bread slices until golden brown and crisp on both sides. This creates the delightful textural contrast that makes Shahi Tukda so special. Remove the fried bread and place it on a plate lined with paper towels to absorb excess oil.
- Dip each fried bread slice into the honey syrup for about a minute, allowing it to soak up the sweet, fragrant liquid. Arrange the soaked bread slices on a serving platter. Pour the prepared rabri generously over the bread, ensuring each piece is coated. The rabri adds a creamy, luxurious element to the dish.
- Garnish the Shahi Tukda with slivered almonds, pistachios, and charoli nuts. Drizzle with a little extra honey for added sweetness and visual appeal. Serve warm or chilled and enjoy this exquisite Indian dessert.
