  • In a saucepan, combine 1 cup of water and 1 tbsp of ghee. Heat over medium heat until the water comes to a simmer.
  • Once simmering, whisk in the rice flour and salt. Stir continuously to prevent lumps. This creates a smooth dough base.
  • Stir in the rose syrup. Cover the saucepan and remove from heat. Let it rest for 5 minutes. This allows the flour to fully hydrate.

  • Lightly grease your hands with ghee or oil. Knead the dough until it becomes soft and pliable. Cover the dough with a clean cloth and set aside.

For the Filling

  • Steam the modaks for 8-10 minutes over medium heat, or until they are cooked through and soft. A toothpick inserted into the center should come out clean.
