Ingredients
 

For the Mango Mint Puree

For the Sugar Syrup

  • 1 cup Sugar granulated
  • 1 cup Water for sugar syrup

For the Lemonade

  • 1 Lemon large lemon
  • 4 cup Water for diluting the lemonade (optional)
  • Ice cubes Ice for serving

Instructions
 

Prepare the Mango Mint Puree

  • Add the raw mango and mint leaves to a pressure cooker. Add 2 cups of water.
  • Pressure cook for 2 whistles. Allow the pressure to release naturally.
  • Once cool enough to handle, peel the mango. Blend the cooked mango and mint into a smooth puree using an immersion blender or regular blender.
  • Strain the puree to remove any fibers or seeds. Set aside to cool.

Make the Sugar Syrup

  • In a small saucepan, combine 1 cup of sugar and 1 cup of water.
  • Bring to a simmer over medium heat, stirring until the sugar dissolves completely and the syrup slightly thickens.
  • Remove from heat and let cool completely.

Assemble the Lemonade

  • Juice the lemon and add the juice to the cooled mango-mint puree.
  • Stir in the cooled sugar syrup.

Serve

  • To serve, fill a glass ¾ full with the mango lemonade. Top with chilled water or ice cubes as desired.
