Ingredients

- 1 Mango large, firm raw mango, raw
- 1/2 cup Mint Leaves fresh
- 2 cup Water for pressure cooking
Instructions
Prepare the Mango Mint Puree
- Add the raw mango and mint leaves to a pressure cooker. Add 2 cups of water.
- Pressure cook for 2 whistles. Allow the pressure to release naturally.
- Once cool enough to handle, peel the mango. Blend the cooked mango and mint into a smooth puree using an immersion blender or regular blender.
- Strain the puree to remove any fibers or seeds. Set aside to cool.
Make the Sugar Syrup
- In a small saucepan, combine 1 cup of sugar and 1 cup of water.
- Bring to a simmer over medium heat, stirring until the sugar dissolves completely and the syrup slightly thickens.
- Remove from heat and let cool completely.
Assemble the Lemonade
- Juice the lemon and add the juice to the cooled mango-mint puree.
- Stir in the cooled sugar syrup.
Serve
- To serve, fill a glass ¾ full with the mango lemonade. Top with chilled water or ice cubes as desired.
