  • 1/2 cup Mung Bean also known as split yellow mung beans, yellow
  • 1 cup Water for soaking the moong dal

Prepare the Moong Dal

  • Soak the moong dal in water for at least 20 minutes, or until softened. Rinse thoroughly and set aside.

Prepare the Vegetables and Garnishes

  • Finely chop the onion and cucumber. Finely grate the carrot. Deseed the pomegranate and set aside. Chop the coriander and mint leaves.

Assemble the Chaat

  • In a medium bowl, combine the soaked and drained moong dal, pomegranate seeds, onion, carrot, and cucumber.

Season and Serve

  • Add salt, chaat masala, red chili powder, and lime juice. Mix well to combine. Garnish generously with fresh coriander and mint leaves. Serve chilled immediately for the best flavor and texture.
