  • Peel and puree the lychees in a blender or food processor until smooth.
  • Gently mix the lychee puree with the plain soda water. This adds a light, bubbly texture to the popsicles.
  • Fill your popsicle molds halfway with the lychee mixture.
  • Place the molds in the freezer for 30 minutes to allow the lychee layer to partially freeze. This helps create distinct layers.
  • Combine the cucumber juice and fresh mint leaves. Lightly muddle the mint leaves in the juice to release their aroma.
  • Remove the popsicle molds from the freezer. Fill the remaining space with the cucumber-mint mixture.

  • Return the molds to the freezer. Freeze for another 30 minutes, then insert popsicle sticks.
  • Continue freezing for several hours, or until the popsicles are solid.

  • For a smoother texture, blend the mango mixture thoroughly before freezing. Any remaining fibers can create an icy texture.
  • Get creative with your popsicle molds! Silicone molds are easy to use, but you can also use small paper cups or even ice cube trays.
