Ingredients
Lychee Layer
- 1/2 kg Lychees
- 500 ml Plain Soda Water
Cucumber Layer
- 2 cup Cucumber Juice
- 1/2 cup Mint Leaves fresh
Instructions
- Peel and puree the lychees in a blender or food processor until smooth.
- Gently mix the lychee puree with the plain soda water. This adds a light, bubbly texture to the popsicles.
- Fill your popsicle molds halfway with the lychee mixture.
- Place the molds in the freezer for 30 minutes to allow the lychee layer to partially freeze. This helps create distinct layers.
- Combine the cucumber juice and fresh mint leaves. Lightly muddle the mint leaves in the juice to release their aroma.
- Remove the popsicle molds from the freezer. Fill the remaining space with the cucumber-mint mixture.
- Return the molds to the freezer. Freeze for another 30 minutes, then insert popsicle sticks.
- Continue freezing for several hours, or until the popsicles are solid.

Expert Tips
- For a smoother texture, blend the mango mixture thoroughly before freezing. Any remaining fibers can create an icy texture.
- Get creative with your popsicle molds! Silicone molds are easy to use, but you can also use small paper cups or even ice cube trays.
- To easily remove the popsicles from the mold, run the mold under warm water for a few seconds.

- Store popsicles in an airtight container or freezer bag in the freezer for up to 3 months.
