For the Mint Paste

  • 1 cup Mint Leaves approximately 20-25 leaves; remove stems before using., fresh
  • 1/2 cup Water
  • 2 tbsp Jaggery or granulated sugar, adjust to taste.
  • 1/2 tsp Salt kala namak; enhances the refreshing quality., black
  • 1/2 tsp Cumin Powder jeera powder; adds a warm, earthy note.
  • 2 tbsp Lemon Juice freshly squeezed is best.

For Serving

  • 2 cup Water more or less, to adjust sweetness and consistency.
  • Ice cubes Ice Cubes

Instructions
 

Prepare the Mint Paste

  • Rinse the mint leaves thoroughly and remove the stems.
  • Combine mint leaves, 1/2 cup water, jaggery, black salt, cumin powder, and lemon juice in a blender.
  • Blend until you achieve a smooth paste.

Strain and Dilute

  • Strain the mint paste through a fine-mesh sieve or cheesecloth into a bowl or pitcher, discarding the solids.
  • In a separate pitcher or glass, combine the strained mint mixture with 2 cups of water.
  • Stir well to combine.

Serve Chilled

  • Add ice cubes to each serving glass.
