Ingredients
Yogurt Layer
- 1 cup Yogurt greek yogurt recommended for creaminess; or use black currant or mango flavored yogurt.
- 1/2 cup Rolled Oats raw oats
Fruit Layer 1
- 1 Apple cored and diced
- 1/4 cup Pomegranate Seeds
- 1/2 Peach diced
Fruit Layer 2 (Optional)
- 1/2 Apple cored and diced
- 1/8 cup Pomegranate Seeds
- 1/2 Peach diced
Garnish
- 2-3 Prunes halved or quartered
Instructions
Prepare the Oat Mixture
- Soak rolled oats in 1/2 cup of plain yogurt for 5-8 minutes to soften.
Layer the Parfait
- Spoon the oat and yogurt mixture into the bottom of a glass or bowl.
Add the First Fruit Layer
- Top with half of the diced apple, peach, and pomegranate seeds.
Add the Yogurt Layer
- Spoon the remaining 1/2 cup of yogurt over the fruit layer.
Add the Second Fruit Layer (Optional)
- Add the remaining diced apple, peach, and pomegranate seeds.
Garnish and Serve
- Garnish with halved or quartered prunes. Serve immediately and enjoy!
