Ingredients
 

Yogurt Layer

  • 1 cup Yogurt greek yogurt recommended for creaminess; or use black currant or mango flavored yogurt.
  • 1/2 cup Rolled Oats raw oats

Fruit Layer 1

Fruit Layer 2 (Optional)

Garnish

  • 2-3 Prunes halved or quartered

Instructions
 

Prepare the Oat Mixture

  • Soak rolled oats in 1/2 cup of plain yogurt for 5-8 minutes to soften.

Layer the Parfait

  • Spoon the oat and yogurt mixture into the bottom of a glass or bowl.

Add the First Fruit Layer

  • Top with half of the diced apple, peach, and pomegranate seeds.

Add the Yogurt Layer

  • Spoon the remaining 1/2 cup of yogurt over the fruit layer.

Add the Second Fruit Layer (Optional)

  • Add the remaining diced apple, peach, and pomegranate seeds.

Garnish and Serve

  • Garnish with halved or quartered prunes. Serve immediately and enjoy!
