- ½ Avocados
- ¾ cup Tomatoes drained, packed in olive oil, sun-dried

- 1 pinch Chaat Masala

- Wash the cucumber thoroughly. Using a mandoline or a sharp knife, carefully slice the cucumber into thin, long ribbons.
- In a food processor or bowl, combine the sun-dried tomatoes, avocado, salt, and chili flakes. Pulse or mash until a smooth paste forms.
- Stir in the chaat masala for a tangy, savory flavor. Taste and adjust seasonings as needed.
- Spread a thin layer of the avocado mixture down the center of each cucumber ribbon.
- Carefully roll up each cucumber ribbon to create a pinwheel shape. Secure with a toothpick. This helps the pinwheels hold their shape.
