Instructions

Prepare the Vada Batter

  • Grind the fresh corn kernels and partially boiled raw bananas with milk until a smooth paste forms. Transfer this paste to a bowl and mix in the asafoetida, raisins, salt, and chopped coriander.

Fry the Vadas

  • Shape the batter into small, flat vadas. Heat oil in a pan and carefully fry the vadas on medium-low heat until golden brown and cooked through.

Prepare the Yogurt Mixture

  • In a separate bowl, whisk the yogurt until smooth. If desired, you can strain the yogurt to achieve a creamier consistency. Stir in the sugar.

Soak and Serve

  • Once the vadas are cooked, add them to the sugar-yogurt mixture and let them soak for about 5 minutes. Garnish with pomegranate seeds, cumin powder, black pepper powder, chaat masala, and ginger-garlic paste. Serve immediately and enjoy!

Recipe Notes

Expert Tips for Perfect Dahi Vadas:

  • For optimal flavor, use fresh, sweet corn and ripe raw bananas.
  • Don't overcrowd the pan when frying the vadas; fry them in batches to ensure even cooking.
  • Adjust the amount of sugar in the yogurt mixture to your preference.
  • For a spicier kick, add a pinch of red chili powder to the yogurt mixture or as a garnish.
