  • 1 tsp Ghee For roasting the rajgira flour

Instructions
 

Preparing the Rajgira

  • In a small bowl, whisk the rajgira flour with 1/2 cup of the water to make a smooth lump-free slurry.
  • Heat the ghee in a saucepan over low heat. Add the rajgira slurry and cook for 1–2 minutes, stirring continuously.

Cooking the Porridge

  • Gradually add the remaining 1/2 cup water while whisking continuously. Cook for 2–3 minutes until the mixture begins to thicken.
  • Add the milk, chopped dates and cardamom powder. Cook over low heat for 4–5 minutes, stirring frequently, until the porridge is smooth and creamy. Do not let it boil vigorously.
  • If the porridge becomes too thick, add a splash of warm milk and stir until it reaches a spoonable consistency. Serve warm.

Recipe Notes

Make-Ahead Tip

The porridge is best served fresh, but the rajgira flour can be measured in advance and the dates can be chopped and refrigerated. If reheating cooked porridge, loosen it with a little warm milk.

Office Tiffin Tip

Pack the porridge in a leak-proof insulated container. It can also be enjoyed warm or at room temperature, depending on your preference.

Quick Swap

For a slightly different texture, add 1-2 tablespoons of extra warm milk at the end if you prefer a thinner porridge. The dates provide the sweetness in the base recipe.

Vrat Note

This recipe uses ingredients commonly used during Navratri fasting. Vrat rules vary by family and region, so follow the fasting practices you personally observe.
