Ingredients
Chilies & Aromatics
- 8-10 Chili adjust quantity based on desired spice level. wash thoroughly., green
- 1/4 tsp Asafoetida also known as hing or heeng., hing
- 1 tsp Mustard Seed rai
- 1/2 tsp Fenugreek Seed also known as methi methi., methi dana
Spices & Flavorings
- 1/2 tsp Turmeric also known as haldi or haldi haldi., haldi
- 1 tsp Mango Powder also known as amchoor or raw amchoor. adds a tangy flavor., amchoor, dry
- 1 tsp Jaggery also known as gur. use grated jaggery for easier mixing., gur
- 1.5 tsp Salt adjust to taste.
Other Ingredients
- 1 tbsp Gram Flour besan, use roasted besan for a richer flavor.
- 1 tbsp Mustard Oil
- 2-3 tbsp Water add more if needed for desired consistency.
Instructions
Preparation
- Wash and cut the green chilies into rounds.
Tempering and Cooking
- Heat mustard oil in a wok or pan over medium heat. Add asafoetida, mustard seeds, and fenugreek seeds. Cook for 1 minute until the seeds splutter.
- Add turmeric powder and mix well. Add the green chilies and sauté for 2-3 minutes. Stir in the dry mango powder and sauté again. Cover and cook for another 2-3 minutes.
Finishing Touches
- Remove the lid. Add the roasted gram flour and grated jaggery. Sprinkle in 2-3 tablespoons of water. Mix well and cook for 2 minutes, stirring continuously until the sabzi thickens to your desired consistency.
Serving
- Serve hot. Enjoy with puris or parathas!
