Ingredients

- 1/4 tsp Asafoetida hing
- 1 tsp Turmeric Powder haldi
- 1 tbsp Ginger finely chopped
- 1 tbsp Garlic finely chopped
Vegetables
- 1/2 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 200 gm Chili Pickle approximately 1 cup, green, reserve some for garnish
Instructions
Sauté Aromatics
- Heat oil in a pan. Add cumin seeds and asafoetida; sauté for a few seconds over medium heat.
Cook Ginger, Garlic, and Turmeric
- Add finely chopped ginger, garlic, and turmeric powder. Cook for 3-4 minutes, or until the garlic is lightly browned.
Add Onions and Tomatoes
- Add the finely chopped onion and cook until it turns translucent and slightly pink.
- Add the chopped tomatoes and cook until softened and beginning to release their oils. Add 1/2 cup of water (or as needed) and cover the pan. Simmer until the vegetables are cooked through and the oil begins to separate.
Incorporate Green Chili Pickle
- Chop the green chili pickle (reserve some for garnish) and add it to the cooked sauce. Add salt to taste and cook for a couple of minutes, until the pickle's aroma and flavor infuse the curry. Turn off the heat.
Garnish and Serve
