Ingredients
 

Spices & Aromatics

Vegetables

  • 1/2 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 200 gm Chili Pickle approximately 1 cup, green, reserve some for garnish

Other Ingredients

  • 1 tbsp Oil vegetable or mustard oil
  • 1.5 tsp Salt or to taste
  • 1/2 cup Water or as needed
  • 1 tbsp Coriander for garnish, optional

Instructions
 

Sauté Aromatics

  • Heat oil in a pan. Add cumin seeds and asafoetida; sauté for a few seconds over medium heat.

Cook Ginger, Garlic, and Turmeric

  • Add finely chopped ginger, garlic, and turmeric powder. Cook for 3-4 minutes, or until the garlic is lightly browned.

Add Onions and Tomatoes

  • Add the finely chopped onion and cook until it turns translucent and slightly pink.
  • Add the chopped tomatoes and cook until softened and beginning to release their oils. Add 1/2 cup of water (or as needed) and cover the pan. Simmer until the vegetables are cooked through and the oil begins to separate.

Incorporate Green Chili Pickle

  • Chop the green chili pickle (reserve some for garnish) and add it to the cooked sauce. Add salt to taste and cook for a couple of minutes, until the pickle's aroma and flavor infuse the curry. Turn off the heat.

Garnish and Serve

  • Garnish with reserved green chili pickle and fresh cilantro (optional). Serve hot with your favorite Indian bread or steamed rice.
