Ingredients
 

Vegetables

  • 2 cups Spinach and roughly chopped, fresh, washed
  • 1 medium Onion finely chopped
  • 5 Chili finely chopped (adjust to taste), green
  • 5 clove Garlic minced

Soy Products

  • 2 cups Soy Chunks also known as soya vadi; soak in warm water for at least 30 minutes before using, dried

Spices & Seasoning

Other

  • 1/2 cup Oil vegetable or canola oil
  • 4 cups Water for soaking soy chunks

Instructions
 

Prepare the Soy Chunks

  • Soak the soy chunks in 4 cups of warm water with 1/2 teaspoon of salt for at least 30 minutes, or until they have doubled in size. Drain well and squeeze out any excess water. Set aside.

Sauté Aromatics

  • Heat the oil in a deep pan or kadhai over medium heat. Add the cumin seeds and sauté until they begin to crackle. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add Spices and Vegetables

  • Add the finely chopped green chilies and sauté for another 30 seconds. Add the finely chopped onion and cook until softened, about 3-4 minutes.

Cook the Spinach

  • Add the chopped spinach to the pan and stir well to combine. Cook over medium-high heat for 2-3 minutes, or until the spinach wilts and releases its moisture.

Combine and Simmer

  • Add the prepared soy chunks, turmeric powder (if using), red chili powder (if using), and salt to taste. Stir well to combine. Cover the pan and cook for 5-7 minutes, or until the sabzi is heated through and slightly dry. Stir occasionally to prevent sticking.

Serve

  • Serve the Soya Chunks Spinach Sabzi hot with roti, chapati, naan, or rice.
