- 1/4 tsp Chili Powder red
- 1/4 tsp Garam Masala
- 1 tsp Salt or to taste
- 1 tbsp Yogurt
- 1 tsp Oil for deep frying
- 1 leaf Curry Leaves
Instructions
Prepare the Soya Chunks
- Boil the soya chunks in water until tender. Drain well and set aside to cool completely.
Make the Batter
- In a bowl, whisk together the all-purpose flour, cornflour, salt, half of the red chili powder, half of the garam masala, and half of the ginger-garlic paste. Gradually add water, mixing until a thick, smooth batter forms. Adjust the consistency as needed.
Coat and Fry the Soya Chunks
- Dip each soya chunk into the batter, ensuring it's fully coated. Deep fry in hot oil until golden brown and crispy. Remove and drain on paper towels.
Prepare the Spice-Infused Sauce
- Heat oil in a pan. Add the green chili, remaining ginger-garlic paste, red chili powder, garam masala, salt, and curry leaves. Saute for a minute until fragrant.
Add Yogurt and Simmer
- Stir in the yogurt and cook, stirring constantly, until the sauce thickens slightly and the oil begins to separate.
Combine and Toss
- Add the fried soya chunks to the sauce. Toss gently to coat evenly with the spice mixture.
Serve
- Serve your crispy Soya 65 hot, garnished as desired, and with tomato ketchup or your preferred dipping sauce.
Recipe Notes
Expert Tips for the Perfect Soya 65
- For extra crispy soya chunks, ensure the oil is hot enough before frying. Test by dropping a small amount of batter into the oil; it should sizzle immediately.
- Don't overcrowd the pan while frying. Fry the soya chunks in batches to ensure even browning and crispiness.
- Adjust the amount of red chili powder to your preferred spice level. For a milder Soya 65, reduce the quantity accordingly.
- For a richer flavor, you can add a pinch of turmeric powder to the batter.
