Ingredients
For the Dough
- 2 cup Whole Wheat Flour atta, whole
- 3/4 - 1 cup Water add gradually, as needed, to achieve a soft dough.
- 1 tsp Salt for the dough
- 1 tbsp Oil for the dough
For the Potato Filling
- 2 medium Potatoes and grated, boiled, peeled
- 1/2 cup Coriander finely chopped
- 1-2 tsp Salt to taste
- 1/4 tsp Chili Powder adjust to your spice preference, red
- 1 tbsp Oil for sautéing the filling
For Cooking
- 2 tbsp Ghee for cooking the parathas
Instructions
Prepare the Dough
- Combine whole wheat flour and salt in a bowl. Gradually add water while mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Add 1 tbsp oil to the dough, knead it in and let it rest for at least 15-20 minutes.
Prepare the Potato Filling
- Heat oil in a pan. Add the grated potatoes and sauté for 2-3 minutes. Stir in the chopped coriander, salt, and red chili powder. Cook until the potatoes are slightly browned and the moisture evaporates. Remove from heat and let it cool.
Assemble and Cook the Parathas
- Divide the dough into equal-sized balls. Roll each ball into a circle. Place a spoonful of the potato filling in the center. Bring the edges of the dough together, pleat, and seal tightly. Gently roll out the stuffed dough into a paratha.
Cook the Parathas
- Heat a tawa (griddle) over medium heat. Cook the paratha on both sides until golden brown and crispy, applying ghee or oil between each flip. Serve hot with your favorite accompaniments.
