Ingredients
Dough
- 300 gm Wheat Flour whole
- 2 tsp Oil
- 1 tsp Salt
- 0.5 cup Water or as needed
Filling
- 500 gm Cabbage finely shredded
- 2 tbsp Gram Flour besan
- 2 tbsp Oil
- 1 medium Onion finely chopped
- 3 tsp Chili Pepper finely chopped, green
- 0.5 tsp Chili Powder red
- 3 clove Garlic crushed
- 0.5 tsp Cumin Seeds
- Salt to taste
For Cooking
- Clarified Butter as needed
Instructions
- In a large bowl, combine the whole wheat flour, salt, and oil. Gradually add water and knead until a soft, pliable dough forms. This step develops the gluten, resulting in softer parathas. Cover and let the dough rest for at least 30 minutes.
- Dry roast the gram flour (besan) in a pan over medium heat until fragrant and lightly golden. This enhances the nutty flavor of the besan. Set aside to cool.
- Heat oil in a wok or large pan over medium-high heat. Add the chopped onions and sauté until translucent. Add salt, green chilies, red chili powder, crushed garlic, and cumin seeds. Sauté for another minute until fragrant.
- Add the shredded cabbage and mix well. Cook, stirring frequently, until the cabbage wilts and releases its water. Continue cooking until the water evaporates and the cabbage is tender.
- Add the roasted gram flour to the cabbage mixture and stir well to combine. The gram flour helps bind the filling and adds a delicious nutty flavor. Remove from heat and let the filling cool completely.
- Divide the dough and the cabbage filling into equal-sized portions. Roll out a dough portion into a small circle. Place a portion of the cabbage filling in the center.
- Bring the edges of the dough towards the center, enclosing the filling completely. Gently flatten the stuffed ball.
- Roll out the stuffed ball into a thin paratha, dusting with flour as needed to prevent sticking.
- Heat a flat griddle or tawa over medium heat. Cook the paratha on both sides, using oil or ghee, until golden brown and cooked through. Serve hot with yogurt, chutney, or pickle.
