- Clean and wash the spinach leaves thoroughly. Blanch them in boiling water for 2-3 minutes. Drain well and puree until smooth in a blender.
Prepare the Rice
- Wash the basmati rice and soak it in water for at least 20 minutes.
Roast the Cashews
- Heat 1 tablespoon of ghee in a small pan. Add the cashews and roast until golden brown. Remove and set aside.
Sauté Aromatics
- Heat the remaining ghee and vegetable oil in a large pan or pot over medium heat. Add the bay leaf, cinnamon stick, cloves, and cardamom pod. Sauté for 30 seconds until fragrant.
Cook the Onion and Garlic
- Add the chopped onions and garlic to the pan and sauté until translucent, about 3-5 minutes.
Add Spices and Puree
- Add the cumin seeds and coriander powder. Stir well and sauté for 30 seconds. Add the green chili (if using) and salt. Now add the spinach puree and cook, stirring frequently, until the raw smell disappears, about 5 minutes.
Combine with Rice
- Drain the soaked rice and add it to the pan with the spinach mixture. Stir well to combine.
Simmer and Finish
- Add 2.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked through and the liquid is absorbed. Fluff with a fork before serving.
Garnish and Serve
- Stir in the roasted cashews. Serve the Palak Pulao hot as a delicious and healthy meal.
