Ingredients
Nutty Chocolate Mixture
- 5 Almonds whole
- 2 Walnuts halves
- 3 Cashews whole
- 1/2 tbsp Milk Powder such as everyday dairy whitener
- 1/4 tsp Cocoa Powder such as hershey's, unsweetened
- 1 tsp Jaggery Powder
- 1/8 tsp Ghee
Topping
- 8 Chocolate Chips dark
Instructions
- In a pan, combine the jaggery and water. Cook over medium heat, stirring until the jaggery dissolves completely.
- Once the jaggery dissolves and begins to bubble, reduce the heat to low. Continue cooking until the syrup reaches a one-string consistency. This means that when you lift a spoon of syrup, a thin string of syrup forms between the spoon and the pan.
- Strain the jaggery syrup through a fine-mesh sieve to remove any impurities. Set aside to cool completely.
- Dry roast the almonds, walnuts, and cashews separately in a dry skillet over medium heat until fragrant and lightly toasted. Be careful not to burn them.
- Spread the roasted nuts on a plate or baking sheet to cool completely.
- In a small mixer grinder (or food processor), combine the cooled roasted nuts, milk powder, cocoa powder, jaggery powder, cooled jaggery syrup, and ghee.
- Grind on low speed in short pulses, or use the pulse button, until the mixture comes together to form a dough that can be rolled into balls. Avoid over-processing, which can make the mixture oily.
- Transfer the dough to a bowl.
- Roll small portions of the dough into balls, then slightly flatten each ball.
- Make a small indentation in the center of each flattened ball with your thumb and place a dark chocolate chip in the indentation.
- Serve the Nutty Jaggery Chocolate Bites as they are, or drizzle with extra jaggery syrup and garnish with additional chocolate chips, if desired.
Recipe Notes
Good To Know
- Use more almonds than other nuts for enhanced flavor.
- Avoid over-grinding the nut mixture, as this can make the dough too liquid to form into balls.
- For extra texture and flavor, lightly toast the nuts before mixing them into the chocolate.
- If you prefer a dairy-free version, substitute milk powder with coconut milk powder or oat milk powder.
- When melting jaggery, use a candy thermometer to ensure it reaches the 'soft ball' stage (235–240°F/112–115°C).
- To create individual chocolates, use silicone molds or mini cupcake liners, and garnish with sea salt or a whole nut.
Expert Tips
- If you find the jaggery difficult to work with, try substituting it with brown sugar or maple syrup, adjusting the amount to achieve the desired sweetness.
- For a richer chocolate flavor, use high-quality dark chocolate with a cocoa content of at least 70%.
- Experiment with different types of nuts and seeds to create your own unique flavor combinations.
Storage Instructions
- Store the chocolates in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
