Ingredients
Dry Ingredients
- 2 cup Whole Wheat Flour whole
- 1 cup Edible Gum gond
- 1 cup Almonds sliced
- 3 tbsp Ginger Powder soonth, dry
- 2 tbsp Long Pepper Powder pipramul
- 1 tsp Turmeric Powder
Instructions
- In a non-stick pan, heat the ghee over medium heat. Add the edible gum and fry until it puffs up. This enhances its texture and flavor. Set the fried gum aside.
- In the same pan, reduce the heat to low and add the whole wheat flour. Sauté the flour, stirring constantly, until it releases a fragrant aroma and takes on a light pink hue. Add more ghee if needed to prevent sticking.
- Continue toasting the flour until it develops a light pink color. This step is crucial for enhancing the nutty flavor of the Katlu.
- Once the flour is toasted, add the fried edible gum, dry ginger powder, long pepper powder, turmeric powder, and most of the sliced almonds, reserving some for garnishing. Stir well to combine all the ingredients.
- Mix thoroughly and remove the pan from the heat.
- Allow the mixture to cool to room temperature. Adding jaggery to a hot mixture can make it difficult to handle and may affect the final texture. Once cooled, add the grated jaggery and mix well until it's evenly distributed.
- Spread the mixture evenly onto a greased plate or thali. Use a spatula to create a smooth, level surface. Garnish with the reserved sliced almonds.
- Let the Katlu cool completely. Once set, cut it into diamond or square shapes.
