  • 1 tbsp Almonds finely chopped
  • 1 tbsp Pistachios finely chopped

Prepare the Gud Papdi

  • Melt the ghee in a non-stick pan over low heat.
  • Add the whole wheat flour and sauté continuously for 10-12 minutes, or until it turns a light golden brown. Stir constantly to prevent burning.
  • Remove from the heat. Add the grated jaggery and cardamom powder. Mix thoroughly until the jaggery melts completely and the mixture is well combined.
  • Stir in the chopped almonds and pistachios.
  • Pour the mixture into a lightly greased thali (large plate) and spread it evenly using the base of a small bowl.
  • Allow the Gud Papdi to cool slightly before cutting it into square pieces while still warm.
  • Store in an airtight container at room temperature. Enjoy!

  • For a richer flavor, toast the whole wheat flour lightly in a dry pan before adding the ghee.
