Instructions
- In a small bowl, whisk together ¼ cup of the milk and the cornstarch until smooth. This creates a slurry that will thicken the ice cream base.
- In a medium saucepan, combine the remaining milk and the granulated sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk comes to a simmer. Do not boil.
- Slowly whisk the cornstarch slurry into the simmering milk mixture. Continue to cook, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 4-5 minutes.
- Remove the saucepan from the heat and let the mixture cool completely. You can speed up the cooling process by placing the saucepan in an ice bath.
- Once the mixture is cool, stir in the vanilla extract.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cooled milk mixture until just combined.
- Pour the mixture into a shallow, airtight container. Cover and freeze for at least 6 hours, or until semi-frozen.
- Transfer the semi-frozen mixture to a food processor or blender and process until smooth. This step creates a creamy texture by breaking down ice crystals.
- Return the mixture to the container, cover, and freeze for another 4-6 hours, or until firm.
- Scoop and serve. Garnish with your favorite toppings, such as sprinkles, chocolate chips, or a fresh mint leaf.
