Instructions

Prepare the Batter

  • Beat the egg and powdered sugar together until light and fluffy.

Combine Dry Ingredients

  • In a separate bowl, whisk together the flour, cocoa powder, and baking powder. Sift twice for a smoother batter.

Combine Wet and Dry

  • Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Stir in the vanilla extract and oil.

Prepare the Ramekins

  • Lightly grease four microwave-safe ramekins or muffin tins with cooking spray or butter.

Assemble the Cakes

  • Fill each ramekin about 1/4 full with batter. Place a few pieces of chopped dark chocolate in the center of each. Fill the ramekins the rest of the way (about 3/4 full) with batter.

Microwave and Bake

  • Microwave on high for 1-1.5 minutes, or until the edges are set but the center is still slightly soft. Cooking time may vary depending on your microwave. Let the cakes cool slightly in the ramekins before serving.

Serve and Enjoy

  • Carefully remove the cakes from the ramekins and serve immediately while the chocolate is still molten. Enjoy!

Recipe Notes

Expert Tips for Perfect Lava Cakes

  • Use high-quality dark chocolate for the best flavor and melting experience.
  • Don't overmix the batter; overmixing can lead to tough cakes.
  • Cooking times may vary depending on your microwave's power. Start with 1 minute and check for doneness. Add 15-second intervals as needed.
  • For a richer flavor, add a pinch of salt to the batter.
