Instructions

Prepare the Cherries

  • Rinse, dry, and pit the cherries. Divide them into two portions. Roughly chop one portion and set aside. Halve the remaining cherries and set aside for garnish.

Combine Dry Ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt.

Combine Wet Ingredients

  • In a large bowl, cream together the melted butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract and milk.

Combine Wet and Dry Ingredients

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Fold in Cherries

  • Gently fold in the chopped cherries.

Prepare the Baking Pan

  • Grease and flour a 9-inch round cake pan. Alternatively, line the bottom with parchment paper.

Bake the Cake

  • Pour the batter into the prepared pan and spread evenly. Arrange the halved cherries on top of the batter.
  • Bake in a preheated oven at 350°F (175°C) for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve

  • Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Slice and serve.

Recipe Notes

Expert Tips for the Best Cherry Cake:

  • For an extra moist cake, use fresh, high-quality cherries.
  • Don't overmix the batter, as this can lead to a tough cake.
  • To check for doneness, insert a toothpick into the center of the cake; if it comes out clean, the cake is done. If not, bake for a few more minutes.
  • Let the cake cool completely before slicing to prevent it from crumbling.
