Ingredients
Bread Ingredients
- 0.75 cup Sugar or jaggery
- 0.75 cup Milk
- 0.5 cup Ghee
- 1 Large Egg beaten, or 0.25 c applesauce, or 0.25 c thick room-temperature yogurt
- 1 tsp Vanilla Extract
- 1.88 cup Whole Wheat Flour whole
- 1 tbsp Corn Flour
- 2 tsp Baking Powder
- 1-1.5 cup Canned Cherries chopped
Glaze Ingredients
- 0.33 cup Sugar or powdered jaggery, powdered
- 2 tbsp Butter melted
- 0.33 cup Canned Cherries crushed
- 0.5 cup Juice any kind, optional
- 0.5 tsp Almond Extract
Instructions
- Preheat oven to 400°F (200°C).
- Strain the canned cherries, discarding the pits. Chop the cherries.
- In a large bowl, whisk together the sugar, milk, ghee, egg, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, cornstarch, and baking powder. This ensures the leavening agents are evenly distributed for a consistent rise.
- Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix, as this can lead to a tough bread.
- Fold in the chopped cherries.
- Grease a loaf pan. Pour the batter into the prepared pan.
- Bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the bread is baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, melted butter, crushed cherries, juice (if using), and almond extract until smooth.
- Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Once the bread is completely cool, spread the glaze evenly over the top.
- Slice and serve. The glaze will soak into the bread over time, making it even more moist and flavorful. For a less sweet option, enjoy the bread without the glaze.
Recipe Notes
Good To Know
- PV's Cherry Bread Glazed with Cherry Sauce offers a delicious blend of sweet cherries and a soft, moist bread, enhanced by a luscious cherry glaze.
- Key ingredients include sugar or jaggery for sweetness, milk for richness, desi ghee for flavor and softness, eggs (or substitutes like apple puree or thick curd), whole wheat flour and corn flour for the base, and fresh cherries.
- Serving suggestions include enjoying the bread warm for comfort or chilled for a firmer texture.
- Consider variations like adding nuts, spices (cinnamon, nutmeg), or citrus zest.
- This bread pairs well with herbal teas or creamy sides like whipped cream or vanilla ice cream.
Expert Tips
- For a more intense cherry flavor, use frozen cherries that have been thawed and drained. Pat them dry before adding to the batter to prevent excess moisture.
- Don't overmix the batter. Overmixing can develop the gluten in the flour, resulting in a tougher bread.
- To ensure even baking, use a light-colored loaf pan. Dark pans tend to absorb more heat and can lead to over-browning.
Storage Instructions
- Store at room temperature in an airtight container for up to 2 days.
- For extended freshness, refrigerate for up to a week.
