- 1 tsp Baking Powder
- 1/4 tsp Baking Soda

- 1 tbsp Coffee Granules dissolved in 1 tablespoon boiling water, instant
- 1/2 cup Dates pitted and coarsely chopped

- 1/2 cup Butter softened, unsalted
- 2 cup Sugar powdered, sifted
- 1 tbsp Heavy Cream
- 1/2 tsp Vanilla Extract
- 1 tsp Coffee Granules dissolved in 1 teaspoon boiling water, instant
Instructions
Prepare the Cake
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
Combine Wet and Dry Ingredients
- Dissolve instant coffee in boiling water. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
Fold in Dates and Bake
- Fold in the chopped dates. Divide the batter evenly between two greased 9-inch round baking pans. Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
