Instructions

  • Heat the oil in a wok or large skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
  • Add the boiled green peas, soaked soya chunks, and salt to the pan. Sauté for 5-7 minutes, stirring occasionally, until the mixture is dry and the soya chunks are lightly browned.
  • Stir in the chopped cilantro, green chilies, and lemon juice. Mix well and remove from heat. This is your tikki filling. Set aside to cool slightly.
  • Take a portion of the mashed potatoes and flatten it into a small disc in your palm. Place a spoonful of the prepared tikki filling in the center.
  • Gently fold the potato mixture over the filling, sealing it completely to form a round or oval tikki. Repeat with the remaining potato and filling.
  • Heat a lightly oiled griddle or skillet over medium heat. Place the tikkis on the griddle and shallow fry for about 3-4 minutes per side, until golden brown and crispy.

Recipe Notes

Good To Know

  • This recipe offers two serving options: plain with chaat masala or with curd, sweet chutney, and chaat masala.

Expert Tips

  • For a spicier kick, add a pinch of cayenne pepper or a finely chopped green chili to the tikki mixture.
  • To ensure even cooking, shape the tikkis into uniform patties, about ½-inch thick.
  • Don't overcrowd the pan when frying the tikkis. Work in batches to allow for proper browning and crisping.

Storage Instructions

  • Leftover tikkis can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or oven until warmed through and crispy.
