Ingredients

- 250 g gm Potato boiled and mashed
For Serving
- 1 cup cup Yogurt
- 1/4 cup cup Chutney such as mango chutney, sweet
- Chaat Masala to taste

- Heat the oil in a wok or large skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the boiled green peas, soaked soya chunks, and salt to the pan. Sauté for 5-7 minutes, stirring occasionally, until the mixture is dry and the soya chunks are lightly browned.
- Stir in the chopped cilantro, green chilies, and lemon juice. Mix well and remove from heat. This is your tikki filling. Set aside to cool slightly.
- Take a portion of the mashed potatoes and flatten it into a small disc in your palm. Place a spoonful of the prepared tikki filling in the center.
- Gently fold the potato mixture over the filling, sealing it completely to form a round or oval tikki. Repeat with the remaining potato and filling.
- Heat a lightly oiled griddle or skillet over medium heat. Place the tikkis on the griddle and shallow fry for about 3-4 minutes per side, until golden brown and crispy.
- To serve, sprinkle the tikkis with chaat masala. For an extra layer of flavor, top with a dollop of yogurt, a drizzle of sweet chutney, and an additional sprinkle of chaat masala.
