Prepare the Crispy Black Gram

  • Boil 1 cup of black gram until very tender. Drain well and let them cool slightly.
  • Using a spoon or a potato masher, gently flatten the boiled black gram. Be careful not to completely crush them.
  • Heat 1 tbsp of vegetable oil in a pan over medium-low heat. Add the flattened black gram and toast for 5-10 minutes, stirring occasionally, until they are crispy and golden brown.
  • Remove from heat and immediately add 1 tbsp of dry mango powder, 1.5 tsp of salt and 1/2-1 tsp red chili powder (depending on your preference). Toss well to coat evenly.

Assemble the Chaat

  • In a large bowl, combine the crispy black gram with 1/2 finely chopped onion, 1/2 finely chopped tomato, 1-2 finely chopped green chilies, 2 tbsp of chopped coriander leaves, 1 tbsp of lemon juice, and 1 tbsp of chaat masala.
  • Mix gently to combine all ingredients.
