Ingredients
For the Tikki Filling
- 1 cup Cabbage grated
- 1/2 cup Peas green
- 2 cup Textured Soy Protein tsp, soaked
- 1 tsp Garlic Paste
- 1 tsp Ginger Paste
- 2 Chillies chopped, green
- 2 tbsp Coriander chopped, fresh
- 1 tsp Cinnamon ground
- 1 tsp Cumin Seeds roasted
- 1 1/2 tsp Salt or to taste
For the Potato Mixture
- 250 gm Potatoes boiled and mashed
For Coating and Frying
- 1 cup Puffed Rice for coating
- Oil as required
Instructions
- Heat oil in a pan over medium heat. Add the ginger paste and garlic paste. Sauté for about 30 seconds until fragrant.
- Add the grated cabbage, green peas, soaked textured soy protein, salt, chopped green chilies, chopped fresh coriander, ground cinnamon, and roasted cumin seeds to the pan. Mix well to combine.
- Cook the mixture for 5-7 minutes, or until the cabbage is softened and the soy protein is heated through. Set aside.
- Take the mashed potatoes and form them into small balls. Create a well in the center of each potato ball.
- Fill the well of each potato ball with the cooked vegetable and soy protein mixture. Gently seal the filling inside, ensuring the potato mixture encloses the filling completely.
- Coat each filled potato ball with the puffed rice. Gently press the puffed rice onto the potato mixture to ensure it adheres well.
- Heat oil in a frying pan over medium heat. Shallow fry the coated tikkis until they are golden brown and crispy, turning them occasionally to ensure even cooking. This creates a delightful textural contrast.
- Remove the tikkis from the pan and place them on a plate lined with paper towels to absorb excess oil. Serve hot with your favorite chutney or sauce.
Recipe Notes
Good To Know
- For an extra crispy crust, lightly coat each tikki with a mixture of semolina (sooji) and rice flour before shallow frying—this adds both crunch and a subtle nutty flavor.
- If you’d like to boost the protein content, replace half the potatoes with mashed paneer or even crumbled tofu; this variation holds shape well and adds a creamy texture.
- To give your tikkis a smoky, street-style flavor, try adding a pinch of chaat masala and crushed roasted cumin seeds to the mixture before shaping.
- Leftover tikkis can be refrigerated and later used as a delicious filling for wraps or sandwiches; simply reheat on a tawa and pair with mint chutney and sliced onions for a quick meal.
Expert Tips
- Don't overmix the potato mixture, as this can make the tikkis dense. Gently combine the ingredients until just incorporated.
- For even cooking, ensure your tikkis are of uniform thickness. Use a cookie cutter or a small bowl to shape them neatly.
- Serve your nostalgic tikkis with a variety of chutneys, such as mint-coriander chutney, tamarind chutney, or even a spicy chili garlic chutney.
Storage Instructions
- Store leftover tikkis in an airtight container in the refrigerator for up to 3 days.
