Instructions

Sauté the Onions

  • Heat oil in a large pan or pot over medium heat. Add the chopped onions and cook until light golden brown, about 5-7 minutes.

Bloom the Spices

  • Add the green chilies, ginger-garlic paste, and all the spice powders (turmeric, red chili, coriander, and garam masala). Stir well and cook for 1-2 minutes until fragrant, ensuring the spices don't burn.

Add Potatoes and Peas

  • Stir in the potatoes, green peas, salt, and water. Mix well to combine all ingredients. Bring to a simmer.

Simmer and Finish

  • Reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender. If the mixture becomes too dry, add a little more water.

Garnish and Serve

  • Garnish with fresh coriander leaves and serve hot with rice, naan, or roti.

Recipe Notes

Expert Tips for the Perfect Matar Aloo

  • For a richer flavor, use ghee (clarified butter) instead of oil.
  • If using frozen peas, add them towards the end of the cooking time to prevent overcooking.
  • Adjust the amount of green chilies according to your spice preference. Start with less and add more as needed.
  • To enhance the aroma, lightly toast the whole spices (cumin, coriander seeds) before grinding them into powder.
