Ingredients
For the Curry Base
- 2 Large Onions finely chopped
- 1 inch Ginger finely grated or minced
- 4-5 Garlic Cloves minced
- 2 Large Tomatoes pureed or finely chopped
- 1 tsp Cumin Seeds zeera
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder mirch (adjust to taste)
- 1 tsp Garam Masala
- 1 tsp Mango Powder adds tanginess), amchur powder (optional, dry
- 1 tbsp Coriander Powder dhania powder
- 1.5 tsp Salt or to taste
- 2 tbsp Vegetable Oil or ghee (clarified butter)
Other Ingredients
- 250 gm Cottage Cheese indian cottage cheese, cut into 1-inch cubes
- 250 gm Peas frozen
- 1/2 cup Water or as needed to adjust consistency
- 1 tbsp Coriander chopped (for garnish)
Instructions
Prepare the Onion-Ginger-Garlic Base
- Finely chop the onions, grate the ginger, and mince the garlic. Heat the oil in a pan or pot over medium heat. Add the onions and sauté until golden brown. Add the ginger and garlic and sauté for another minute until fragrant.
Blend and Simmer the Tomato Gravy
- Remove from heat and let the onion mixture cool slightly. Blend the mixture with the pureed tomatoes (or finely chopped tomatoes) into a smooth paste. Heat the oil again in the pan. Add the cumin seeds and let them splutter. Add the tomato paste and cook until the oil separates from the gravy, about 10-12 minutes, stirring frequently.
Add Spices and Peas
- Add the turmeric powder, chili powder, garam masala, coriander powder, amchur powder (if using), and salt. Mix well and cook for another 2-3 minutes. Stir in the frozen peas and cook for about 5 minutes until they are heated through.
Add Paneer and Simmer
- Add the paneer cubes and 1/2 cup of water to the gravy. Bring to a simmer. Reduce the heat and let it simmer for 5-7 minutes, allowing the flavors to blend. Adjust the water quantity if needed to achieve your desired consistency.
Garnish and Serve
- Garnish with fresh cilantro and serve hot with naan, roti, or rice.
