Ingredients
 

For the Phirni

  • 1 cup Flattened Rice flattened rice
  • 2 cup Milk or heavy cream for a richer flavor
  • 1/2 cup Sugar adjust to your sweetness preference
  • 1/4 tsp Cardamom Powder finely ground, or 2-3 green cardamom pods
  • 1 tbsp Corn Flour or arrowroot powder

For the Mango Layer

  • 1 cup Mango and diced, peeled, ripe

For Garnishing

  • 1/4 cup Almonds optional, sliced

Instructions
 

Prepare the Poha

  • Dry roast the poha in a pan over medium heat for 2 minutes, stirring constantly, until lightly fragrant. Let it cool completely.
  • Grind the roasted poha into a coarse powder using a blender or food processor.

Make the Phirni

  • In a saucepan, whisk together the cornstarch with 2 tablespoons of cold milk until smooth. Set aside.
  • Heat the remaining milk in the saucepan over medium heat. Add the sugar and stir until dissolved.
  • Add the ground poha and cardamom powder to the warm milk. Cook for 3-4 minutes, stirring frequently, until the poha is cooked through and the mixture has thickened slightly.
  • Gradually whisk in the cornstarch mixture and cook for another 2 minutes, or until the phirni has reached your desired consistency.
  • Remove from heat and let cool completely.

Assemble and Serve

  • In small dessert glasses or ramekins, layer mango chunks and the cooled poha phirni. Repeat layers as desired.
  • Garnish with sliced almonds before serving. Refrigerate for at least 30 minutes before serving for optimal flavor and texture.
