Loaded Sweet Potatoes

Try this loaded sweet potato dish stuffed with cheesy and crunchy filling which will fill your kids stomach and heart for the summer holidays.
Carbohydrate rich sweet potato added with the goodness of vegetables and cheese makes this a healthy recipe for kids to enjoy as a fun food too. Moms can't resist to grab a spoon too!

Ingredients
- Sweet potato - 1 stout one preferred
- Chilli flakes - 1 tsp
- Mixed herbs - 1 tsp
- Pink Salt - 1/4 tsp
- Pepper - 1/2 tsp
- Cream cheese - 2 tbsp
- Mayonnaise- 2 tbsp
- Mozzarella cheese - 1/4 cup grated
- Coriander/parsley - to garnish
- Butter - 1/4 tsp
- Chopped onion - 1/4 cup
- Chopped tomato - 1/4 cup
- Chopped capsicum- 1/4 cup
- Chopped cucumber - 1/4 cup
- Chopped garlic - 1 tbsp

Instructions
- Take a stout sweet potato and cut them into half, brush little butter over it and bake in oven for 15- 20 mins at 180°C or until it's cooked
- In a bowl mix cream cheese, salt, pepper, 3/4 tsp chili flakes, 3/4 tsp mixed herbs, mayonnaise and chopped vegetables.
- Take the baked sweet potato out of oven and scrape the flesh part ( leaving 1 inch of flesh with the skin itself) and add it to the prepared stuffing mixture.
- Now stuff the Sweet Potatoes with the prepared mixture.
- Top it with grated mozzarella cheese, 1/4 tsp chili flakes, 1/4 tsp mixed herbs and few coriander leaves.
- Bake at 170°C for 10 mins or until you see the cheese melting and covering the top entirely.
- Loaded sweet potatoes are ready to serve. Cool for 5 mins and serve
Notes
- You can reduce the amount of chili flakes and pepper, use any vegetable of your choice according to your kids preferences
