  • Take a stout sweet potato and cut them into half, brush little butter over it and bake in oven for 15- 20 mins at 180°C or until it's cooked

  • In a bowl mix cream cheese, salt, pepper, 3/4 tsp chili flakes, 3/4 tsp mixed herbs, mayonnaise and chopped vegetables.

  • Take the baked sweet potato out of oven and scrape the flesh part ( leaving 1 inch of flesh with the skin itself) and add it to the prepared stuffing mixture.

  • Now stuff the Sweet Potatoes with the prepared mixture.
  • Top it with grated mozzarella cheese, 1/4 tsp chili flakes, 1/4 tsp mixed herbs and few coriander leaves.

  • Bake at 170°C for 10 mins or until you see the cheese melting and covering the top entirely.

  • You can reduce the amount of chili flakes and pepper, use any vegetable of your choice according to your kids preferences
