Ingredients
For the Potatoes
For the Savory Filling
- 1 cup Soya Chunks or Granules, soaked in hot water for 15 mins, then squeezed dry
- 1 tbsp Oil for stir-frying
- 1 cup Cabbage finely shredded
- 1/2 cup Carrot grated
- 1 tsp Black Pepper freshly ground
- 1 tsp Red Chilli Flakes
- 1 tsp Herbs Mixed Dried e.g., oregano, thyme
- Salt to taste
For Assembly & Topping
- 2 tbsp Butter melted
- 1 cup Mozzarella Cheese shredded
- 2 tbsp Coriander or Spring Onion Greens, chopped, for garnish
Instructions
Step 1: Bake the Potatoes
- Preheat your oven to 200°C (400°F). Scrub the potatoes clean and pat them dry. Pierce them several times with a fork.
- Rub the potatoes all over with olive oil and salt. Place them directly on the oven rack and bake for 40-50 minutes, or until the skin is crispy and the inside is tender.
Step 2: Prepare the Filling
- While the potatoes are baking, heat 1 tbsp of oil in a pan over medium heat. Add the soaked and squeezed soya chunks and sauté for 5-7 minutes until they are golden brown and slightly crispy.
- Add the shredded cabbage and grated carrot to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp. Season with black pepper, chilli flakes, mixed herbs, and salt. Mix well and set aside.
Step 3: Assemble the Potato Skins
- Once the potatoes are baked, carefully remove them from the oven and let them cool for a few minutes until you can handle them. Cut each potato in half lengthwise.
- Using a spoon, scoop out the flesh from each half, leaving about a 1/4-inch border to create a sturdy potato shell. Place the scooped-out potato flesh in a bowl and mash it lightly.
- Add the prepared soya-vegetable mixture to the mashed potato flesh and mix everything together thoroughly. This is your 'fully loaded' filling.
Step 4: Load and Final Bake
- Brush the inside of the empty potato shells with melted butter. Spoon the filling mixture evenly into each shell, piling it high.
- Top generously with shredded mozzarella cheese. Place the loaded potato skins on a baking sheet.
- Return to the oven and bake for another 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden. Garnish with fresh coriander or spring onions before serving hot.
