Ingredients
Chicken Filling
- 1 cup Chicken cooked, shredded or diced
Vegetable Filling
- 1 medium Onion finely chopped
- 4 clove Garlic minced
- 1 medium Bell Peppers finely chopped (any color)
Seasoning & Cheese
- 2 tsp Piri Piri Powder
- 1.5 tsp Salt or to taste
- 1/2 tsp Pepper black, freshly ground
- 1.5 cup Cheese monterey jack, or a blend, shredded cheddar
Instructions
Preheat & Prepare
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Bake the Potatoes
- Wash and pierce the potatoes several times with a fork. Toss with olive oil, salt, and pepper. Bake for 40-45 minutes, or until tender.
Prepare the Filling
- While potatoes bake, sauté the onion and garlic in a pan until softened. Add the bell pepper and cook for another 2-3 minutes. Stir in the piri piri powder.
Mash & Mix
- Once the potatoes are cooked, cut them in half and scoop out the flesh, leaving about a 1/4-inch border. In a separate bowl, mash the potato flesh. Stir in the butter and milk until creamy. Add the cooked chicken, sautéed vegetables, and additional salt and pepper to taste.
Stuff & Bake
- Spoon the potato mixture back into the potato skins. Sprinkle generously with shredded cheese.
Final Bake & Garnish
