Potatoes & Prep

Chicken Filling

  • 1 cup Chicken cooked, shredded or diced

Vegetable Filling

Seasoning & Cheese

  • 2 tbsp Chives finely chopped, for garnish
  • 2 tbsp Butter for extra creaminess in the mashed potatoes
  • 1/4 cup Milk for extra creaminess in the mashed potatoes, or cream

Instructions
 

Preheat & Prepare

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Bake the Potatoes

  • Wash and pierce the potatoes several times with a fork. Toss with olive oil, salt, and pepper. Bake for 40-45 minutes, or until tender.

Prepare the Filling

  • While potatoes bake, sauté the onion and garlic in a pan until softened. Add the bell pepper and cook for another 2-3 minutes. Stir in the piri piri powder.

Mash & Mix

  • Once the potatoes are cooked, cut them in half and scoop out the flesh, leaving about a 1/4-inch border. In a separate bowl, mash the potato flesh. Stir in the butter and milk until creamy. Add the cooked chicken, sautéed vegetables, and additional salt and pepper to taste.

Stuff & Bake

  • Spoon the potato mixture back into the potato skins. Sprinkle generously with shredded cheese.

Final Bake & Garnish

  • Bake for 10-15 minutes, or until the cheese is melted, bubbly, and slightly browned. Garnish with fresh chives and serve immediately.
