Cooking the Chana Dal

  • Add soaked chana dal, water, turmeric powder, and salt to a pressure cooker. Pressure cook for 2–3 whistles on medium heat until the dal is cooked but still holds its shape. For unsoaked dal, cook for 3–5 whistles.
  • Allow pressure to release naturally, then drain excess water and keep the dal aside.

Preparing the Stir Fry

  • Heat oil in a wide pan and add cumin seeds. Let them crackle gently.
  • Add chopped bottle gourd and sauté on medium heat for 3 to 4 minutes.
  • Add cooked chana dal and red chilli powder. Mix gently so the dal and lauki are evenly combined.
  • Cover and cook on low heat until the lauki is soft and the mixture turns dry to semi-dry.

Final Steps

  • Stir once, adjust seasoning if needed, and switch off the heat. Serve warm.
