Ingredients
Okra Preparation
- 500 gm Okra bhindi, fresh okra, washed and trimmed
Spices & Aromatics
- 2 tbsp Garlic finely minced
- 1 tsp Chili finely chopped (adjust to taste), green
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped (optional)
- 1/2 tsp Turmeric Powder
- 1/2 tsp Chili Powder adjust to taste, red
- 1 tbsp Coriander fresh coriander, chopped
- 2 tsp Fenugreek Leaves fresh, chopped
- 1 tsp Fennel Seeds
- 1 tsp Dry Mango Powder dry mango powder
- 1 tbsp Lemon Juice
Instructions
Prepare the Okra
- Wash and thoroughly dry the okra. Pat dry with a clean kitchen towel or paper towels to remove excess moisture.
Sauté Aromatics
- Heat oil in a pan or wok over medium heat. Add fennel seeds and let them splutter.
Add Garlic and Onion
- Add minced garlic and sauté until fragrant and lightly golden. Add chopped onions and sauté until translucent.
Spice it Up
- Add green chilies, turmeric powder, red chili powder, and amchur (dry mango powder). Sauté for a minute until fragrant. If using, add the chopped tomatoes and cook until softened.
Cook the Okra
- Add the dried okra to the pan and stir to coat well with the spices. Cover the pan and cook for approximately 5-7 minutes over low heat, stirring occasionally.

- Add salt and fresh coriander leaves. Gently stir in the lemon juice. Do not overcook. Turn off the heat and let the flavors meld for a few minutes.
