Ingredients
For the Eggplant
- 1 medium Eggplant also known as brinjal
For the Batter
- 1/2 cup Gram Flour besan
- 2 tsp Poppy Seeds
- 1 tsp Nigella Seeds kalonji
- 1/2 tsp Chili Powder adjust to your spice preference, red
- 1/2 tsp Turmeric Powder
- 1/2 tsp Salt or to taste
- 1/4 tsp Baking Soda helps create crispiness
- 1/4 cup Water add more as needed to reach desired batter consistency
For Frying
- 2 cup Vegetable Oil or any neutral-flavored oil for deep frying, refined
Instructions
Prepare the Eggplant
- Slice the eggplant into 1/4-inch thick rounds. Salt the slices lightly and set aside for 15 minutes to draw out excess moisture. Pat the slices dry with a clean kitchen towel.
Make the Batter
- In a medium bowl, whisk together the gram flour, poppy seeds, nigella seeds, red chili powder, turmeric powder, salt, and baking soda. Gradually add water, whisking constantly until a smooth, slightly thick batter forms. The consistency should be similar to pancake batter.
Fry the Beguni
- Heat the oil in a deep-bottomed pan or kadai over medium-high heat. Once the oil is hot (a small piece of batter sizzles immediately), carefully dip each eggplant slice into the batter, ensuring itβs fully coated. Gently slide the battered eggplant into the hot oil.
