Instructions

Prepare the Flour Balls

  • Combine all-purpose flour and cardamom powder in a bowl. Gradually add water, mixing until a soft, pliable dough forms.

Cook the Flour Mixture

  • Heat ghee in a pan over medium heat. Add the flour dough and cook, stirring continuously, until it thickens into a halwa-like consistency. Remove from heat and let cool.

Shape the Balls

  • Once cooled, roll the mixture into small, marble-sized balls.

Fry the Balls

  • Heat ghee in a separate pan over low heat. Carefully fry the flour balls in batches until they turn golden brown. This takes approximately 15 minutes per batch. Remove and drain excess ghee.

Prepare the Milk Mixture

  • In a heavy-bottomed pan, bring full-fat milk to a boil. Add sugar, and chopped nuts. Reduce heat to low and simmer for 5-7 minutes.

Combine and Finish

  • Add the fried flour balls to the simmering milk mixture. Cook for another 5-8 minutes. Stir gently to prevent sticking. Remove from heat and stir in rose water (optional).

Serve

  • Garnish with rose petals or chopped nuts. Serve warm or chilled.

Recipe Notes

Expert Tips for the Perfect Kharcha Mithai

  • Use high-quality full-fat milk for the richest flavor and creaminess.
  • Don't overcrowd the pan when frying the flour balls; fry them in small batches to ensure even browning.
  • Adjust the amount of sugar according to your preference. You can also add a pinch of saffron for enhanced color and aroma.
  • For a more intense flavor, toast the nuts lightly before adding them to the milk mixture.
