Ingredients
For the Almond Paste

- 1/2 cup Cottage Cheese grated, homemade or store-bought
- 4 cup Milk whole milk recommended for creaminess
- 1/2 cup Sugar or to taste; adjust to your sweetness preference
- 1-2 strands Saffron infused in 1 tablespoon of warm milk for 10-15 minutes
- 1/2 tsp Cardamom Powder
- 10-12 Almonds and roughly chopped for garnish, blanched, peeled
Instructions
Prepare the Almond Paste
- Grind the soaked almonds with 2-3 tablespoons of water in a blender until you achieve a smooth paste. Set aside.
Heat the Milk and Paneer
- In a medium saucepan, heat the milk over medium heat. Once simmering, add the grated paneer and stir gently. Cook until the paneer is slightly softened and the milk has thickened slightly, about 5-7 minutes.
Combine Ingredients and Simmer
- Reduce heat to low. Add the sugar, almond paste, chopped almonds, cardamom powder, and saffron (with its infused milk) to the milk and paneer mixture. Stir well to combine.
Finish and Serve
- Simmer for another 2-3 minutes, stirring occasionally, until heated through and the flavors have melded. Remove from heat.
Garnish and Enjoy
- Garnish with additional chopped almonds and saffron strands (optional). Serve hot or chilled.
