Ingredients
Jackfruit
- 20 Jackfruit Bulbs ripe
Instructions
- Remove the seeds from the jackfruit bulbs and finely chop them. Place the chopped jackfruit in a pressure cooker with ½ cup of water. Pressure cook for 4-5 whistles until softened.
- Transfer the cooked jackfruit to a heavy-bottomed pan. Simmer over medium heat until the water evaporates and the pulp thickens. Mash the jackfruit well.
- While the jackfruit simmers, prepare the jaggery syrup. In a separate pan, combine the jaggery (equal in volume to the cooked jackfruit pulp) with 1 cup of water. Bring to a boil and cook until the syrup thickens to a two-string consistency. This means the syrup will form two thin threads when stretched between your fingers.
- Add the jaggery syrup to the thickened jackfruit pulp. Stir continuously over low heat. Add ¼ cup of desi ghee. This helps prevent sticking and adds richness.
- Continue stirring until the jam reaches a glossy consistency and no longer sticks to the bottom of the pan. Add the ground cardamom and dry ginger powder. Stir well to combine. Remove from heat.
